Mini Mozzarella Pesto Stuffed Tomatoes

12 mini Roma tomatoes

1 cup fresh mozzarella balls (bocconcini), halved

½ cup fresh basil pesto (store-bought or homemade)

1 tablespoon balsamic glaze

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil, for drizzling

Prepare the Tomatoes: Preheat your oven to 375°F (190°C). Carefully slice the tops off each mini Roma tomato and use a small spoon or melon baller to scoop out the insides, creating a hollow space. Set the hollowed tomatoes upside down on a paper towel to drain excess liquid.

    Mix the Filling: In a mixing bowl, combine the halved mozzarella balls with the basil pesto. Add a pinch of salt and pepper to taste, stirring well until the mozzarella is evenly coated.

      Stuff the Tomatoes: Carefully spoon the mozzarella-pesto mixture into each hollowed tomato, filling them generously. Pack them slightly as you fill for a neat presentation.

        Arrange and Drizzle: Place the stuffed tomatoes upright in a baking dish. Drizzle a little olive oil on top and, if desired, a swirl of balsamic glaze over the stuffed tomatoes for an extra layer of flavor.

          Bake: Put the baking dish in the preheated oven and bake for about 15-20 minutes, or until the tomatoes are tender and the mozzarella is slightly melted and bubbly.

            Garnish and Serve: Remove from the oven and let them cool for a couple of minutes. Garnish each stuffed tomato with fresh basil leaves. Serve warm or at room temperature.
