For the Biscuit Dough:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

4 large eggs

1/2 cup crumbled feta cheese

1/4 cup diced bell pepper (any color)

1/4 cup chopped green onions

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon olive oil (for brushing)

Fresh parsley or dill, chopped (optional, for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Make the Biscuit Dough:

      - In a large mixing bowl, whisk together the flour, baking powder, and salt.

        - Add the cold cubed butter into the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

          - Slowly pour in the buttermilk, stirring until the dough just comes together. Be careful not to overmix.

            Prepare the Filling:

              - In a medium bowl, whisk together the eggs until well blended.

                - Add the crumbled feta, diced bell pepper, chopped green onions, black pepper, and garlic powder. Mix until combined.

                  Assemble the Biscuit Bombs:

                    - On a lightly floured surface, roll out the biscuit dough to about 1/2 inch thick. Use a round cutter (about 3 inches in diameter) to cut out circles.

                      - Place about 1 tablespoon of the egg and feta filling in the center of each dough circle. Fold the edges up to encase the filling, pinching to seal completely.

                        - Arrange the filled biscuit bombs seam-side down on the prepared baking sheet.

                          Bake:

                            - Brush the tops of the biscuit bombs lightly with olive oil for a golden finish.
