2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon black pepper

2 large eggs

1/4 cup fresh basil, chopped (optional)

1/2 cup marinara sauce, for serving

Slider buns or small ciabatta rolls

Olive oil, for frying

Prep the Zucchini: Place the grated zucchinis in a clean kitchen towel or cheesecloth. Gather the edges to form a pouch and twist to squeeze out as much moisture as possible. This step is crucial for achieving crispiness.

    Mix the Ingredients: In a large mixing bowl, combine the drained zucchinis, flour, breadcrumbs, Parmesan cheese, garlic powder, black pepper, and fresh basil (if using). Mix well until all ingredients are incorporated.

      Beat the Eggs: In a separate bowl, whisk the eggs until they are well beaten. Add the beaten eggs to the zucchini mixture and stir until everything is evenly coated and combined.

        Form the Sliders: Using your hands, scoop out small portions of the zucchini mixture (about 2 tablespoons each) and shape them into patties. You should end up with about 12 patties.

          Fry the Patties: In a large skillet, heat enough olive oil over medium-high heat to coat the bottom. Once the oil is hot, carefully place the patties into the skillet, cooking in batches if necessary. Fry each side for about 3-4 minutes, or until golden brown and crispy. Transfer the cooked patties onto a paper towel-lined plate to absorb excess oil.
