1 lb (450g) boneless, skinless chicken thighs or breasts, diced

1/2 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons vegetable oil

1 tablespoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder (adjust for spice level)

1 clove garlic, minced

1 inch ginger, grated

Salt and pepper to taste

8 small flour or corn tortillas

1 cup shredded lettuce

1/2 cup diced tomatoes

1/2 cup diced cucumber

1/4 cup red onion, thinly sliced

1/2 cup mint yogurt sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, mix the yogurt, lemon juice, vegetable oil, garam masala, cumin, coriander, turmeric, chili powder, garlic, ginger, salt, and pepper. Add the diced chicken and ensure it is well-coated. Cover and marinate in the fridge for at least 1 hour, or for best results, overnight.

    Cook the Chicken: Heat a non-stick skillet or grilling pan over medium-high heat. Add the marinated chicken in a single layer and cook for about 5-7 minutes, turning occasionally, until the chicken is cooked through and slightly charred. Ensure the internal temperature reaches 165°F (75°C).

      Prepare the Sliders: While the chicken is cooking, warm the tortillas in a dry skillet for about 30 seconds on each side until pliable.

        Assemble the Sliders: Take a tortilla and add a few pieces of the cooked chicken tikka. Top with shredded lettuce, diced tomatoes, cucumber, and red onion. Drizzle some mint yogurt sauce over the top, folding the tortilla to create a slider.
