Mini Chicken Taco Crescent Rings

1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet (1.25 oz) taco seasoning

1/2 cup water

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1/2 cup black beans, drained and rinsed

1 can (8 oz) refrigerated crescent roll dough

1 egg, beaten (for egg wash)

Optional toppings: sour cream, guacamole, chopped cilantro, sliced jalapeños

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add Chicken and Seasoning: Add the ground chicken to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula (about 6-8 minutes). Stir in the taco seasoning and water. Simmer for 3-4 minutes until the sauce thickens slightly.

        Combine Fillings: Remove the skillet from heat, and mix in the diced tomatoes and black beans. Allow the mixture to cool for a few minutes. Stir in half of the shredded cheese.

          Prepare Crescent Dough: Unroll the crescent roll dough onto a large baking sheet lined with parchment paper. Place the dough in a circular ring, making sure the triangles form a star shape with wider ends pointing outward, creating a sun shape.

            Fill with Chicken Mixture: Spoon the chicken mixture over the center of the crescent ring, spreading it evenly. Then, fold the wide ends of the dough over the filling towards the center, pinching to seal.

              Add Cheese: Sprinkle the remaining shredded cheddar cheese on top, ensuring it covers the exposed filling.
