Mini Chicken Pesto Wonton Cups

1 cup cooked chicken, shredded (preferably rotisserie chicken)

1/2 cup basil pesto (store-bought or homemade)

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 package of wonton wrappers (about 48 wrappers)

1 tablespoon olive oil (for brushing)

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the shredded chicken, basil pesto, cream cheese, mozzarella cheese, and Parmesan cheese. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

      Shape the Wonton Cups: Lightly grease a muffin tin. Take a wonton wrapper and gently press it into each muffin cup, allowing it to form a little cup shape. Repeat with the remaining wrappers.

        Fill the Cups: Spoon about a tablespoon of the chicken pesto mixture into each wonton cup, filling them just to the top.

          Brush with Olive Oil: Lightly brush the edges of each wonton cup with olive oil to create a golden-brown finish.

            Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are crisp and golden.

              Garnish and Serve: Remove the wonton cups from the oven and let them cool for a few minutes. Garnish with fresh basil leaves before serving.
