For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons Greek yogurt

2 tablespoons lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess liquid squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon lemon juice

Salt and dill to taste

For the Sliders:

8 mini pita breads

1 cup grape tomatoes, halved

1 red onion, thinly sliced

1 cup shredded lettuce

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, Greek yogurt, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken thighs, ensuring they are evenly coated. Marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.

    Prepare the Tzatziki Sauce: In a medium bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and dill. Adjust seasoning to taste. Cover and refrigerate for at least 15 minutes while you cook the chicken.

      Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove chicken from the marinade and grill for about 5-7 minutes per side until cooked through and browned. The internal temperature should reach 165°F (75°C). Remove from heat and let rest for a few minutes before slicing into smaller pieces.

        Assemble the Sliders: Warm the mini pita breads either on the grill or in a microwave. Begin stacking by placing a layer of shredded lettuce inside each pita, followed by a portion of sliced chicken, halved grape tomatoes, red onion, and a dollop of tzatziki sauce. Sprinkle with feta cheese if using.
