Mini Chicken Fajita Taco Cones

Ingredients
  

For the Chicken Fajita Filling:

1 lb boneless, skinless chicken breasts, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

Fresh lime juice from 1 lime

Fresh cilantro for garnish

For the Taco Cones:

6 small flour tortillas

1 cup shredded cheddar cheese

Cooking spray or oil for greasing

Dipping sauce of choice (e.g., salsa, sour cream, or guacamole)

Instructions
 

Marinate the Chicken: In a bowl, mix together the olive oil, chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper. Toss the thinly sliced chicken in the marinade and let it sit for at least 20 minutes to absorb the flavors.

    Cook the Chicken & Vegetables: In a large skillet over medium heat, add the marinated chicken. Cook for 5-7 minutes or until the chicken is cooked through and golden brown. Add in the sliced peppers and onion. Sauté for another 4-5 minutes until the vegetables are tender. Squeeze fresh lime juice over the mixture and toss in chopped cilantro. Remove from heat and set aside.

      Prepare the Taco Cones: Preheat your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or oil. Take a tortilla and gently bend it to form a cone shape. Carefully place it in the muffin tin to hold its shape. Repeat with the remaining tortillas.

        Add Cheese: Sprinkle about 2 tablespoons of shredded cheddar cheese inside each tortilla cone. Bake in the preheated oven for 5-7 minutes until the tortillas are crispy and the cheese is melted.

          Fill the Cones: Once the cones are out of the oven and slightly cool, fill each cone with the chicken fajita mixture.
