Ingredients

1 package (12-14 count) mini corn taco shells

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/2 cup diced green onions

1/2 cup diced tomatoes (drained, if canned)

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 cup sour cream (for serving)

Fresh cilantro leaves (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.

Prepare the Cheese Mixture: In a medium bowl, combine the cheddar cheese, Monterey Jack cheese, cream cheese, green onions, diced tomatoes, garlic powder, cumin, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

Fill the Taco Shells: Using a small spoon or piping bag, carefully fill each mini taco shell with the cheese mixture, packing it lightly to prevent overflow.

Arrange on Baking Sheet: Place the filled taco shells upright on the prepared baking sheet, ensuring they stand securely.

Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and the edges of the taco shells start to turn golden brown.

Cool and Serve: Remove the taco bites from the oven and let them cool for a minute. Serve warm with a side of sour cream and garnish with fresh cilantro leaves, if desired.
