1 block (14 oz) firm tofu, drained and pressed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ cup buffalo sauce (store-bought or homemade)

1 head of butter lettuce or romaine, leaves separated

½ cup shredded carrots

½ cup diced celery

½ cup crumbled blue cheese or vegan alternative (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Tofu: After pressing the tofu, cut it into small 1-inch cubes. This allows the tofu to absorb the flavors of the spices and buffalo sauce better.

    Season the Tofu: In a mixing bowl, toss the tofu cubes with olive oil, garlic powder, onion powder, smoked paprika, and salt until evenly coated.

      Bake the Tofu: Preheat your oven to 400°F (200°C). Spread the seasoned tofu cubes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes until golden brown and crispy, flipping halfway through for even cooking.

        Buffalo Sauce Coating: In a separate bowl, toss the baked tofu cubes with the buffalo sauce until they are fully coated. You can adjust the amount of sauce to your liking based on how spicy you want your bites.
