Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

4 large eggs

1 cup cooked breakfast sausage, crumbled

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (red, yellow, or green)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Cooking spray or melted butter for greasing

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with cooking spray or melted butter.

Make Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Add Buttermilk: Pour the buttermilk into the flour mixture. Stir until just combined; do not overmix.

Prepare Filling: In another bowl, whisk together the eggs, then add in the crumbled sausage, shredded cheddar cheese, diced bell peppers, black pepper, and garlic powder. Mix until thoroughly combined.

Form Biscuit Balls: Take a tablespoon-sized amount of biscuit dough and flatten it gently in your hand. Add a spoonful of the sausage and cheese mixture in the center of the dough. Carefully fold the sides of the dough over the filling and roll into a ball. Repeat this for the remaining dough and filling.

Place in Muffin Tin: Arrange the biscuit bomb bites in the greased muffin tin, placing them seam side down.

Bake: Bake in the preheated oven for 15-18 minutes or until golden brown on top.

Cool and Serve: Allow the bites to cool slightly before removing them from the tin. Serve warm, and enjoy with your favorite dipping sauce, like spicy ketchup or ranch dressing.
