2 cans young green jackfruit in water or brine (drained and rinsed)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

1 cup BBQ sauce (your favorite brand or homemade)

12 mini slider buns

1 cup coleslaw mix (for topping)

½ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Jackfruit: Start by tearing the jackfruit into smaller pieces with your hands or a fork. Aim for a pulled pork-like texture.

    Cook the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Spices: Mix in the smoked paprika, ground cumin, chili powder, salt, and black pepper. Allow the spices to toast in the pan for about a minute, stirring continuously.

        Incorporate Jackfruit: Add the shredded jackfruit to the skillet and stir well to combine with the spices and onions.

          Add BBQ Sauce: Pour in the BBQ sauce, ensuring all the jackfruit is coated. Reduce the heat to low, cover the skillet, and let simmer for 15-20 minutes, stirring occasionally. The jackfruit will become tender and infused with flavors.
