1 medium head of cauliflower, cut into small florets

1 cup shredded mozzarella cheese (or plant-based cheese for a dairy-free option)

1/2 cup almond flour (or breadcrumbs)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup BBQ sauce (choose your favorite; a smoky or spicy one works great)

Optional toppings: sliced pickles, coleslaw, or sliced jalapeños

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: Steam the cauliflower florets until tender (about 6-8 minutes). Allow them to cool slightly, then transfer to a clean kitchen towel or cheese cloth. Squeeze out as much moisture as possible.

      Mix the Dough: In a large mixing bowl, combine the squeezed cauliflower, mozzarella, almond flour, eggs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are combined.

        Form the Buns: Using your hands, shape the mixture into small slider-sized patties (about 2 inches in diameter) and place them on the prepared baking sheet. You should be able to make about 10-12 sliders.

          Bake the Slider Buns: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the sliders are golden brown on both sides.
