Mini Air Fryer Veggie Quesadilla Rolls

4 small flour tortillas

1 cup shredded mozzarella cheese

1/2 cup cooked black beans (rinsed and drained)

1/2 cup corn kernels (fresh or frozen)

1/2 red bell pepper, finely chopped

1/2 zucchini, grated

1/4 cup red onion, finely chopped

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Olive oil spray

Optional: salsa and sour cream for dipping

Prep the Veggies: In a large mixing bowl, combine the black beans, corn, red bell pepper, zucchini, and red onion. Add in the ground cumin, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are well combined.

    Assemble the Quesadilla Rolls: Lay one tortilla flat on a clean surface. Sprinkle about 1/4 cup of shredded mozzarella on one half of the tortilla. Add a generous portion of the veggie mixture on top of the cheese, then sprinkle another layer of cheese over the veggies. Fold the tortilla in half to create a semi-circle, pressing it down gently to seal.

      Prepare for Air Frying: Preheat your air fryer to 375°F (190°C). While it heats up, spray the outside of each quesadilla roll lightly with olive oil spray for a crispy finish.

        Air Fry the Quesadilla Rolls: Place the folded quesadilla rolls in the air fryer basket in a single layer, ensuring they are not overcrowded. Depending on your air fryer size, you may need to do this in batches. Cook for 8-10 minutes, flipping halfway through, until the tortillas are golden brown and crispy.

          Serve: Once cooked, remove the quesadilla rolls from the air fryer and let them cool for a minute. Slice into bite-sized pieces. Serve with salsa and sour cream on the side for dipping, if desired.
