1 can (15 oz) chickpeas, drained and rinsed

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Juice of 1 lemon

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

For the Dressing:

1 tablespoon red wine vinegar

1 teaspoon dried oregano

1 garlic clove, minced

1/2 teaspoon ground cumin

Prepare the Dressing: In a small bowl, whisk together red wine vinegar, dried oregano, minced garlic, ground cumin, lemon juice, and olive oil. Season with salt and pepper to taste. Set aside.
