1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Prep the Vegetables: Start by preparing your vegetables. Rinse and drain the chickpeas. Halve the cherry tomatoes, dice the cucumber, bell pepper, and finely chop the red onion.

    Mix the Salad: In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives. If using feta cheese, add that in as well.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Adjust the seasoning according to your taste preference.

        Combine and Toss: Pour the dressing over the salad mixture. Gently toss all the ingredients together until everything is well coated with the dressing.

          Add Herbs: Fold in the fresh parsley for a burst of flavor and freshness.

            Serve: Divide the salad among serving bowls. Serve with lemon wedges on the side for an extra zing.

              Chill (Optional): For enhanced flavors, you can let the salad chill in the refrigerator for about 30 minutes before serving.
