Maple Roasted Beets with Feta

4 medium-sized beets, scrubbed and trimmed

2 tablespoons olive oil

2 tablespoons pure maple syrup

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper, to taste

1/2 cup crumbled feta cheese

1/4 cup walnuts, roughly chopped

Fresh parsley, finely chopped, for garnish

Lemon wedges, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Beets: Wrap each beet in aluminum foil, ensuring they're tightly sealed. Place them on a baking sheet and roast in the preheated oven for 45-60 minutes, or until fork-tender. The cooking time may vary based on the size of the beets.

      Cool and Peel: Once roasted, allow the beets to cool slightly, then unwrap them from the foil. Wearing gloves (to avoid staining), peel the skins from the beets and slice them into wedges.

        Make the Maple Glaze: In a mixing bowl, whisk together the olive oil, maple syrup, balsamic vinegar, salt, and black pepper.

          Toss the Beets: In a large bowl, add the beet wedges and drizzle the maple glaze over them. Gently toss to coat all the beets evenly.

            Roast Again: Spread the glazed beets onto a baking sheet in a single layer and roast in the oven for an additional 15-20 minutes, until the edges are slightly caramelized.

              Serve: Remove the roasted beets from the oven and transfer them to a serving platter. Sprinkle the crumbled feta and chopped walnuts over the top.
