Maple Roasted Acorn Squash Rings

1 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped pecans (optional)

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Slice off the ends of the acorn squash to create flat surfaces. Carefully cut the squash into 1-inch thick rings. Remove the seeds and stringy flesh from the center of each ring using a spoon.

      Make the Glaze: In a small bowl, whisk together the maple syrup, olive oil, cinnamon, nutmeg, salt, and black pepper until well combined.

        Coat the Rings: Place the acorn squash rings on a large baking sheet lined with parchment paper. Brush both sides of the rings generously with the maple glaze.

          Roasting Time: Roast the squash in the preheated oven for 25-30 minutes, flipping halfway through the cooking time, until the rings are fork-tender and caramelized around the edges.

            Add Pecans (Optional): In the last 5 minutes of roasting, sprinkle the chopped pecans over the squash for added crunch and flavor.

              Serve: Once roasted, remove the squash from the oven and let them cool for a few minutes. Garnish with fresh thyme leaves if desired, then serve warm as a side dish or a delightful addition to your fall-inspired meal.
