Ingredients

4 large turkey legs

1/2 cup pure maple syrup

1/4 cup soy sauce

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon dried thyme

1/4 teaspoon cayenne pepper (optional)

Fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prep the Turkey Legs: Pat the turkey legs dry with paper towels. This helps the skin become crispy during roasting.

Make the Marinade: In a medium bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, black pepper, salt, thyme, and cayenne pepper until well combined.

Marinate the Turkey Legs: Place the turkey legs in a large resealable plastic bag or a deep dish. Pour the maple marinade over the legs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Roast the Turkey Legs: Remove the turkey legs from the marinade, reserving the marinade for later. Place the legs on a roasting pan lined with foil or parchment paper for easy cleanup. Roast the legs in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C).

Glaze the Turkey Legs: After about 30 minutes of roasting, baste the turkey legs with the reserved marinade to enhance their flavor and create a beautiful glaze. Return to the oven and continue roasting.

Crisp the Skin: For the last 10 minutes of cooking, switch the oven to broil (high), watching carefully to avoid burning. Broil until the skin is crispy and caramelized.

Rest and Serve: Once cooked, remove the turkey legs from the oven and let them rest for 5-10 minutes. Garnish with fresh parsley before serving. Enjoy!
