4 ripe mangoes (about 2 ½ cups of pureed mango)

1 cup freshly squeezed lemon juice (about 4-5 lemons)

1 cup granulated sugar

1 ½ cups water

Zest of 2 lemons

A pinch of salt

Fresh mint leaves (for garnish, optional)

Prepare the Mangoes: Peel and pit the mangoes. Cut the flesh into small chunks and add them to a blender. Blend until smooth to produce approximately 2 ½ cups of pureed mango.

    Make the Lemonade Base: In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved. Remove from heat.

      Combine Ingredients: In a large mixing bowl, combine the pureed mango, freshly squeezed lemon juice, lemon zest, and a pinch of salt. Pour the cooled sugar-water mixture into the bowl and stir well until all ingredients are thoroughly combined.

        Chill the Mixture: Cover the bowl with plastic wrap and place it in the refrigerator for about 1-2 hours to chill. This step helps the sorbet to freeze evenly later.

          Freeze the Mixture: Once chilled, pour the mango-lemonade mixture into a shallow dish or an ice cream maker. If using a dish, place it in the freezer. If using an ice cream maker, churn according to manufacturer instructions until it reaches a soft-serve consistency.
