1 pound chicken breast, cut into bite-sized pieces

1 ripe mango, diced

1 medium jalapeño, deseeded and finely chopped

1 cup cooked quinoa (or rice)

1 red bell pepper, diced

1 avocado, sliced

1/2 cup corn (canned or frozen)

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Juice of 1 lime

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with olive oil, cumin, chili powder, lime juice, and a pinch of salt and pepper. Mix well to coat. Cover and let marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes or until the chicken is fully cooked and golden brown, stirring occasionally. Remove from heat.

      Prepare the Quinoa/Rice: If you haven't done so already, cook the quinoa or rice according to the package instructions. Fluff with a fork once cooked and set aside.

        Assemble the Bowls: In serving bowls, start with a base of quinoa or rice. Top with cooked chicken, diced mango, chopped jalapeño, diced red bell pepper, corn, and sliced avocado.
