Mango Glazed Turkey

Ingredients
  

1 whole turkey (12-14 lbs)

2 cups fresh mango puree (approximately 3 ripe mangos)

1/2 cup honey

1/4 cup soy sauce

1 tablespoon grated fresh ginger

1 teaspoon ground cinnamon

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup olive oil

Fresh cilantro and lime wedges for garnish

Instructions
 

Prepare the Turkey:

    - Thaw the turkey completely if frozen. Remove any giblets from the cavity and pat the turkey dry with paper towels. Season generously with salt and pepper, both inside and outside.

      Make the Mango Glaze:

        - In a medium saucepan over medium heat, combine the mango puree, honey, soy sauce, grated ginger, cinnamon, garlic powder, and onion powder. Stir well and bring to a light simmer. Let it cook for about 10 minutes until slightly thickened, stirring occasionally. Remove from heat and set aside.

          Marinate the Turkey:

            - Once the glaze has cooled slightly, divide it into two portions. Use one portion to brush over the turkey, ensuring it's evenly coated. Reserve the second portion for basting during roasting. If you have time, let the turkey marinate in the refrigerator for at least 2 hours, or overnight for maximum flavor.

              Preheat the Oven:

                - Preheat your oven to 325°F (160°C). Fit a roasting pan with a rack for the turkey.

                  Roast the Turkey:

                    - Place the turkey breast-side up on the rack in the roasting pan. Drizzle olive oil over the turkey and brush any leftover marinade on it. Cover the turkey loosely with aluminum foil to prevent over-browning.

                      Cooking Time:

                        - Roast the turkey in the preheated oven, basting every 30 minutes with the reserved glaze, for approximately 2.5 to 3 hours, or until the internal temperature reaches 165°F (75°C) when measured in the thickest part of the breast and thigh.

                          Final Touch:

                            - In the last 30 minutes of roasting, remove the foil to allow the skin to crisp up and become golden brown. If you wish, you can brush on more mango glaze for added flavor and shine.

                              Rest and Serve:

                                - Once cooked, remove the turkey from the oven and let it rest for at least 15-20 minutes before carving. Garnish with fresh cilantro and lime wedges for an added burst of flavor. Serve with seasonal sides like rice, roasted vegetables, or a fresh salad.
