Mango Glazed Shrimp

1 pound large shrimp, peeled and deveined

1 ripe mango, peeled and cubed

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

1 tablespoon sesame seeds (for garnish)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Prepare the Mango Glaze: In a blender, combine the cubed mango, honey, soy sauce, lime juice, rice vinegar, minced garlic, and grated ginger. Blend until smooth. If the glaze is too thick, add a tablespoon of water to reach the desired consistency.

    Marinate the Shrimp: Place the shrimp in a bowl, season with salt and pepper, and pour half of the mango glaze over them. Toss to coat evenly and let marinate for at least 15 minutes.

      Cook the Shrimp: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the marinated shrimp. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.

        Add the Remaining Glaze: Pour the remaining mango glaze over the cooked shrimp. Stir well to coat and let it cook for another 1-2 minutes, allowing the sauce to thicken slightly.

          Serve: Remove the skillet from heat and serve the mango glazed shrimp over rice or salad. Garnish with sesame seeds and freshly chopped cilantro.
