For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

For the cheesecake filling:

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh blueberries (you can also use frozen)

For the blueberry topping:

2 cups fresh blueberries

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

Instructions
 

Prepare the crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and vanilla extract. Mix until well combined. Press the mixture firmly into the bottom of a greased 9x13-inch baking pan. Bake for 10 minutes, then remove from the oven and let it cool slightly.

    Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy. Add the vanilla extract and mix well. Incorporate the eggs one at a time, mixing thoroughly after each addition. Finally, add the sour cream and mix until just combined. Gently fold in the fresh blueberries.

      Assemble the bars: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the preheated oven for 35-40 minutes or until the center is set and slightly jiggles when shaken. Allow it to cool at room temperature, then chill in the refrigerator for at least 4 hours, or overnight, to set completely.

        Prepare the blueberry topping: In a saucepan over medium heat, combine the fresh blueberries, sugar, cornstarch, and lemon juice. Cook while stirring gently until the blueberries burst and the mixture thickens, about 5-7 minutes. Remove from heat and let cool before spreading over the cheesecake bars.
