3 medium zucchinis, sliced into thin strips (about 1/8 inch thick)

1 lb ground turkey or beef (lean)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1 cup marinara sauce (sugar-free, if preferred)

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Olive oil spray or 1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Sprinkle salt on the zucchini slices and let them sit for about 15 minutes to draw out moisture. This helps reduce excess water in the lasagna.

    Cook the Meat: In a skillet over medium heat, spray with olive oil or add a tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant. Add ground turkey or beef, breaking it apart with a spoon. Cook until browned and no longer pink. Season with salt, pepper, oregano, and basil.

      Mix the Ricotta: In a bowl, combine ricotta cheese, egg, 1/2 cup of the mozzarella cheese, and Parmesan cheese. Mix well until smooth and incorporated.

        Layer the Lasagna: In a baking dish (about 9x13 inches), spread a thin layer of marinara sauce on the bottom. Then, layer zucchini slices (half of them), followed by half of the meat mixture, half of the ricotta mixture, and a third of the remaining marinara sauce. Repeat the layers (zucchini, meat, ricotta) and finish with the last layer of zucchini topped with marinara sauce and the rest of the mozzarella cheese.
