2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, finely chopped

1 red bell pepper, diced

1 can (28 ounces) fire-roasted diced tomatoes, with juice

2 cups low-sodium vegetable broth

1 tablespoon tomato paste

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup fresh basil leaves, chopped (plus more for garnish)

1/2 cup unsweetened almond milk (or any light milk of your choice)

Salt and black pepper to taste

Freshly grated Parmesan cheese (optional, for serving)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent. Stir in the minced garlic and cook for another minute until fragrant.
