Light Lemon Poppy Seed Muffins

½ cup granulated sugar

2 tablespoons poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

½ cup plain Greek yogurt

1/3 cup vegetable oil

1 teaspoon vanilla extract

Zest of 1 large lemon

⅓ cup fresh lemon juice (about 1-2 lemons)

Optional: powdered sugar for dusting

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a standard muffin tin with paper liners or grease them lightly with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the egg lightly with a whisk. Then add the Greek yogurt, vegetable oil, vanilla extract, lemon zest, and lemon juice. Mix until everything is completely incorporated.
