12 oz (340g) spaghetti or linguine

1 cup fresh ricotta cheese

Zest of 2 large lemons

Juice of 1 large lemon

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 garlic cloves, minced

1/4 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper to taste

Fresh basil leaves, for garnish

Optional: Additional lemon zest for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.

    Prepare the Sauce: While the pasta cooks, in a large mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, grated Parmesan cheese, olive oil, minced garlic, and red pepper flakes (if using). Mix until creamy and well combined.
