Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup honey

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon grated lemon zest

1/2 teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the lemon juice, honey, olive oil, minced garlic, lemon zest, red pepper flakes (if using), salt, and pepper until well combined.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 20-30 minutes to allow the flavors to meld.

Preheat the Grill or Skillet: If using a grill, preheat it to medium-high heat. If using a skillet, heat 1 tablespoon of olive oil over medium heat.

Cook the Shrimp: Remove the shrimp from the marinade, allowing excess marinade to drip off. If grilling, thread the shrimp onto skewers. Cook the shrimp on the grill or in the skillet for about 2-3 minutes per side or until they turn pink and opaque. Be careful not to overcook, as shrimp can become rubbery.

Glaze the Shrimp: Drizzle some of the leftover marinade over the shrimp in the last minute of cooking for a delightful glaze.

Serve: Garnish the cooked shrimp with chopped parsley and serve with lemon wedges on the side for an extra burst of citrus flavor.

Enjoy! Pair with rice, quinoa, or a fresh salad for a complete meal.
