2 cups ripe honeydew melon, cubed

1 cup ice cubes

2 tablespoons honey (or agave syrup for a vegan option)

1 tablespoon freshly squeezed lime juice

1/2 teaspoon vanilla extract

Fresh mint leaves (for garnish)

Prepare the Honeydew: Start by cutting the honeydew melon in half, scooping out the seeds, and removing the rind. Cut the flesh into cubes and place them in a blender.

    Blend the Mixture: Add the ice cubes, honey (or agave syrup), lime juice, and vanilla extract into the blender with the honeydew cubes. Blend on high speed until smooth and slushy. You may need to stop and scrape down the sides of the blender to ensure everything blends evenly.
