2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

6 cups mixed greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, toasted

2 tablespoons balsamic vinaigrette (for dressing)

Instructions
 

Prepare Honey Mustard Glaze: In a small bowl, whisk together honey and Dijon mustard until smooth. Set aside.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Season the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
