Ingredients

2 salmon fillets

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper, to taste

6 cups mixed greens (arugula, spinach, and romaine)

1/2 cup cherry tomatoes, halved

1/4 cup cucumber, sliced

1/4 red onion, thinly sliced

1/2 avocado, diced

1/4 cup crumbled feta cheese

1/4 cup walnuts, chopped (optional)

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until smooth and well combined.

Glaze the Salmon: Place the salmon fillets on the prepared baking sheet, skin-side down. Brush each fillet generously with the honey mustard mixture.

Bake the Salmon: Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is cooked through. You can broil for an additional 2 minutes for a nice caramelized top if desired.

Prepare the Salad Base: While the salmon is baking, prepare the salad. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, feta cheese, and walnuts (if using).

Dress the Salad: Drizzle the remaining honey mustard glaze over the salad or use a light vinaigrette of your choice. Toss gently to combine and coat the ingredients evenly.

Assemble the Plates: Once the salmon is done, let it cool for a minute. Then, place a generous scoop of the salad onto each plate and top with a piece of glazed salmon.

Serve and Enjoy: Garnish with lemon wedges if desired and serve immediately for a fresh and flavorful meal!
