Honey Mustard Glazed Salmon Salad

Ingredients
  

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

6 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, sliced

¼ red onion, thinly sliced

½ cucumber, sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, chopped (optional)

Juice of 1 lemon

2 tablespoons balsamic vinaigrette

Instructions
 

Prepare the Salmon Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the honey mustard glaze over them. Allow it to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for more flavor).

      Cook the Salmon: Preheat your grill or stovetop pan over medium heat. Once hot, place the salmon fillets skin-side down and cook for about 4-5 minutes. Carefully flip the salmon over and brush with the remaining honey mustard glaze. Grill for another 4-5 minutes or until the salmon is cooked through and flakes easily with a fork.

        Assemble the Salad: In a large bowl, combine mixed greens, cherry tomatoes, avocado, red onion, cucumber, feta cheese, and walnuts (if using).

          Dress the Salad: Drizzle the lemon juice and balsamic vinaigrette over the salad and toss gently to combine.

            Serve: Once the salmon is cooked, allow it to rest for a minute. Flake the salmon into large pieces and place it on top of the salad. Drizzle any additional honey mustard glaze over the top if desired. Serve immediately.
