For the Salmon:

4 salmon fillets (about 6 ounces each)

1/4 cup honey

3 tablespoons Dijon mustard

2 tablespoons olive oil

1 tablespoon soy sauce

Salt and pepper to taste

Juice of 1 lemon

For the Salad:

6 cups mixed greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup walnuts, toasted

1/4 cup feta cheese, crumbled

For the Dressing:

2 tablespoons extra virgin olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Prepare the Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, soy sauce, and lemon juice. Add a pinch of salt and pepper to taste.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the honey mustard glaze over them. Cover and let marinate in the refrigerator for 30 minutes.

      Bake the Salmon: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Remove the salmon from the marinade and place it on the prepared baking sheet. Bake for 15-20 minutes or until the salmon flakes easily with a fork. Brush with more honey mustard glaze halfway through baking for extra flavor.

        Prepare the Salad: While the salmon is baking, in a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, walnuts, and feta cheese.

          Make the Dressing: In a small jar or bowl, whisk together the extra virgin olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

            Assemble the Salad: Once the salmon is cooked, allow it to cool slightly. Flake it into large pieces and add it on top of the salad. Drizzle the dressing over the salad and gently toss to combine.
