For the Salmon:

2 salmon fillets (6 oz each)

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon soy sauce

1 tablespoon olive oil

Salt and pepper to taste

Juice of 1 lemon

For the Salad:

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese

1/4 cup walnuts, chopped (optional)

1/2 avocado, sliced

Fresh dill or parsley for garnish (optional)

For the Dressing:

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

Prepare the Salmon Marinade:

    In a small bowl, whisk together honey, Dijon mustard, soy sauce, olive oil, salt, pepper, and lemon juice. Reserve a tablespoon of the marinade for later.

      Marinate the Salmon:

        Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 15-30 minutes at room temperature.

          Preheat the Oven:

            Preheat your oven to 400°F (200°C).

              Bake the Salmon:
