Honey Mustard Glazed Salmon Salad

For the honey mustard glaze:

4 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon olive oil

Juice of 1 lemon

Salt and pepper to taste

For the salmon:

2 salmon fillets (6 ounces each)

Olive oil for drizzling

Salt and pepper

For the salad:

4 cups mixed salad greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, sliced

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese

1/4 cup walnuts or pecans, chopped (optional)

For the dressing:

3 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and pepper to taste

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Make the honey mustard glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, lemon juice, salt, and pepper until well combined. Set aside.

      Prepare the salmon: Line a baking sheet with parchment paper. Place the salmon fillets skin-side down on the sheet. Drizzle lightly with olive oil and season with salt and pepper. Brush the honey mustard glaze generously over the top of each fillet.

        Bake the salmon: Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The glaze should be slightly caramelized.

          Prepare the salad: While the salmon is baking, combine the mixed greens, cherry tomatoes, cucumber, avocado, red onion, feta cheese, and nuts (if using) in a large salad bowl.

            Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Adjust seasoning to taste.

              Assemble the salad: Once the salmon is cooked, remove it from the oven and let it rest for 2-3 minutes. Flake the salmon into big pieces and add it over the salad. Drizzle the salad with the dressing and gently toss to combine.
