Honey Mustard Chicken and Apple Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium apples (such as Honeycrisp or Granny Smith), cored and cut into 1-inch cubes

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh rosemary or thyme for garnish (optional)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, smoked paprika, salt, and black pepper. Whisk until well blended.

    Marinate the Chicken: Add the cubed chicken to the marinade and stir until all pieces are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

      Preheat the Grill: If using a grill, preheat it to medium-high heat. Alternatively, you can use an oven broiler instead.

        Assemble the Skewers: Thread the marinated chicken and apple cubes onto the skewers, alternating between chicken and apple. Leave a little space between the pieces for even cooking.

          Cooking on the Grill: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and has nice grill marks.

            Cooking in the Oven: If using a broiler, place the skewers on a baking sheet lined with parchment paper and broil for about 10-15 minutes, turning halfway, until the chicken is fully cooked and slightly caramelized.
