Honey Garlic Chicken & Sweet Corn Fritters

For the Honey Garlic Chicken:

500g boneless chicken thighs, chopped into bite-sized pieces

3 tablespoons honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon vegetable oil

Salt and pepper to taste

Sesame seeds for garnish

Chopped green onions for garnish

For the Sweet Corn Fritters:

1 cup canned or fresh sweet corn kernels

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon chili powder (optional for a kick)

1/4 teaspoon salt

1/4 teaspoon black pepper

2 eggs, lightly beaten

1/4 cup milk

2 tablespoons fresh cilantro, chopped

Vegetable oil for frying

Instructions
 

Marinate the Chicken:

    In a mixing bowl, combine the honey, soy sauce, minced garlic, grated ginger, salt, and pepper. Add the chopped chicken thighs and stir until well coated. Cover and marinate in the refrigerator for at least 30 minutes.

      Prepare the Fritters:

        In another mixing bowl, combine the flour, baking powder, chili powder, salt, and black pepper. Stir well. In a separate bowl, mix the eggs and milk. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the sweet corn and chopped cilantro.

          Cook the Chicken:

            Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and caramelized. Remove from heat and sprinkle with sesame seeds and chopped green onions.

              Fry the Fritters:

                In another skillet, heat about 1/4 inch of vegetable oil over medium heat. Drop spoonfuls of the fritter batter into the hot oil, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy. Place cooked fritters on paper towels to drain excess oil.

                  Serve:
