For the Dough:

1 ½ cups all-purpose flour

1 tsp salt

1/2 cup unsalted butter, chilled and cubed

1/4 cup ice water

For the Filling:

2 medium sweet potatoes, peeled and thinly sliced

1 cup shredded sharp cheddar cheese

1 tbsp olive oil

1 tsp fresh thyme, chopped

1 tsp fresh rosemary, chopped

1/2 tsp garlic powder

Salt and pepper, to taste

1 egg (for egg wash)

Instructions
 

Make the Dough:

    - In a large bowl, mix the flour and salt together. Add the cubed chilled butter.

      - Using a fork or pastry cutter, mix until the texture resembles coarse crumbs.

        - Slowly add the ice water, one tablespoon at a time, until the dough begins to come together.

          - Form the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - Preheat your oven to 400°F (200°C).

                - In a bowl, combine the sliced sweet potatoes with olive oil, thyme, rosemary, garlic powder, salt, and pepper. Toss until well coated.

                  Roll Out the Dough:

                    - On a lightly floured surface, roll out the cold dough into two circles, about 10 inches in diameter.

                      Assemble the Galettes:

                        - Place each rolled-out dough on a parchment-lined baking sheet.

                          - Sprinkle half of the shredded cheddar cheese in the center of each galette, leaving a 1.5-inch border.

                            - Layer half of the seasoned sweet potatoes over the cheese, then top with the remaining cheddar.

                              Fold the Edges:
