Herbed Ricotta Tomato Galette Bites

Ingredients
  

1 sheet of puff pastry, thawed

1 cup fresh ricotta cheese

1 tablespoon olive oil

1 teaspoon fresh lemon zest

1 teaspoon garlic powder

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh chives

1 tablespoon chopped fresh oregano

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 egg (for egg wash)

Flaky sea salt, for garnish

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface. Cut it into 3-inch squares, making sure to keep the edges neat. You should have about 12 squares.

      Make the Ricotta Mixture: In a mixing bowl, combine the ricotta cheese, olive oil, lemon zest, garlic powder, chopped basil, chives, oregano, salt, and pepper. Mix until well combined and creamy.

        Assemble the Galette Bites: Place about 1-2 tablespoons of the herbed ricotta mixture in the center of each pastry square, spreading it slightly but leaving space at the edges. Top each with a few halved cherry tomatoes, cut side up.

          Fold the Pastry Edges: Gently fold the edges of the puff pastry over the filling, creating a rustic galette shape. The center should remain exposed.

            Prepare for Baking: In a small bowl, beat the egg and brush the edges of each galette with the egg wash to give it a beautiful golden color.

              Bake the Galette Bites: Place the assembled galette bites on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until the puff pastry is golden brown and puffed up.

                Garnish and Serve: Once baked, remove from the oven and sprinkle with flaky sea salt and garnish with fresh basil leaves. Allow to cool slightly before serving.
