Herbaceous Chimichurri Steak Bites

1.5 lbs flank steak, cut into bite-sized pieces

1 cup fresh parsley, finely chopped

1/2 cup fresh cilantro, finely chopped

4 garlic cloves, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup red wine vinegar

1/2 cup extra virgin olive oil

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lemon

Wooden skewers (optional)

Instructions
 

Marinate the Steak: In a large bowl, combine the flank steak pieces with half of the chimichurri sauce (see step 2 for chimichurri instructions). Mix well to ensure all the pieces are coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for a more intense flavor).

    Prepare the Chimichurri Sauce: In a medium bowl, whisk together the chopped parsley, cilantro, minced garlic, red pepper flakes, red wine vinegar, olive oil, salt, black pepper, and lemon juice until well blended. Set aside half for serving and use the other half to marinate the steak.

      Cook the Steak Bites: Preheat a grill or grill pan over medium-high heat. If desired, thread the marinated steak bits onto wooden skewers (this makes them easier to handle but is optional). Grill the steak bites for 2-3 minutes on each side or until desired doneness is achieved (medium rare is recommended for flank steak).

        Assembly: Once cooked, remove the steak bites from the grill and let them rest for a couple of minutes. This allows the juices to redistribute within the meat, keeping them tender and juicy.

          Serve: Arrange the steak bites on a serving platter. Drizzle the reserved chimichurri sauce over the top and garnish with additional fresh herbs if desired. Serve with lemon wedges on the side for an extra zesty touch.
