2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, smoked paprika, chili powder, salt, and pepper. Spread them evenly on a baking sheet and roast in the preheated oven for 25-30 minutes, or until they're tender and slightly caramelized. Stir halfway through cooking to ensure even roasting.

      Sauté the Vegetables: While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the diced red onion and bell pepper, and sauté for about 5-7 minutes until they become fragrant and the onions are translucent. Add the minced garlic and continue to cook for an additional 2 minutes, stirring frequently.

        Combine Ingredients: Once the sweet potatoes are done roasting, add them to the skillet with the sautéed vegetables. Stir in the black beans, and cook everything together for another 3-5 minutes until warmed through. Adjust seasoning with more salt and pepper if needed.
