4 medium zucchini, chopped

1 large onion, diced

2 cloves garlic, minced

2 cups vegetable broth

1 cup coconut milk (or any non-dairy milk)

1 cup fresh spinach

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

Juice of half a lemon

Optional: Fresh herbs (like basil or parsley) for garnish

Instructions
 

Prepare the Ingredients: Start by washing and chopping the zucchini, onion, and garlic. Set aside.

    Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Cook the Zucchini: Add the chopped zucchini and sauté for another 5-7 minutes, stirring occasionally, until the zucchini starts to soften.

        Add Broth and Seasonings: Pour in the vegetable broth, and add the dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for about 10 minutes until the zucchini is tender.

          Blend the Soup: Remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the mixture to a blender in batches and blend until smooth.

            Stir in Coconut Milk and Spinach: Return the blended soup to the pot (if using a regular blender), and stir in the coconut milk and fresh spinach. Heat over low heat until warmed through, about 3-5 minutes.

              Add Lemon Juice: Just before serving, stir in the juice of half a lemon for a bright flavor. Adjust salt and pepper if needed.

                Garnish and Serve: Ladle the soup into bowls or lunch containers. If desired, sprinkle fresh herbs on top before sealing for lunch.
