Ingredients

1 medium zucchini, grated (about 1 cup)

1/2 cup unsweetened cocoa powder

1/2 cup whole wheat flour (or gluten-free flour)

1/2 cup maple syrup or honey

1/4 cup unsweetened applesauce

1/2 cup almond butter or peanut butter

2 large eggs (or flax eggs for vegan option)

1 teaspoon vanilla extract

1/4 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch (20x20 cm) baking pan with parchment paper for easy removal.

Prepare Zucchini: Grate the zucchini and squeeze out any excess moisture using a clean kitchen towel. Set aside.

Mix Wet Ingredients: In a large mixing bowl, whisk together the maple syrup (or honey), unsweetened applesauce, almond (or peanut) butter, eggs, and vanilla extract until smooth.

Combine Dry Ingredients: In a separate bowl, whisk together the cocoa powder, whole wheat flour, baking soda, baking powder, and salt until well combined.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over-mix. Gently fold in the grated zucchini and dark chocolate chips, if using.

Bake the Brownies: Pour the brownie batter into the prepared pan and use a spatula to even it out. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are fine).

Cool and Serve: Allow the brownies to cool in the pan for about 10 minutes, then carefully lift them out using the parchment paper and transfer them to a wire rack to cool completely before cutting into squares.

Enjoy: Serve your fudgy healthy zucchini brownies warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
