2 cups fresh strawberries, hulled and chopped

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

2 tablespoons chia seeds

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Prepare the Strawberries: In a medium saucepan over medium heat, add the chopped strawberries. Use a wooden spoon or a potato masher to gently crush the strawberries as they begin to heat up, releasing their juices.

    Sweeten the Mixture: Once the strawberries are slightly softened (about 3-4 minutes), stir in the honey or maple syrup, lemon juice, and a pinch of salt. Continue to cook for an additional 2-3 minutes, stirring occasionally.

      Thicken with Chia Seeds: Remove the saucepan from heat and stir in the chia seeds, mixing well to ensure they are evenly distributed. The mixture may appear a bit runny at this point, but it will thicken as it cools.

          Cool Down: Allow the jam to cool at room temperature for about 20 minutes, then transfer it to a clean glass jar or container.
