Go Back
After cooking your chicken to perfection, allowing it to rest is crucial for achieving the best texture. Resting helps the juices redistribute throughout the meat, ensuring that each bite is juicy and tender rather than dry and tough. Ideally, let the chicken rest for about 5 to 10 minutes after cooking. During this time, you can prepare your pita breads and other ingredients, making the most of your cooking time.

Ingredients

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 whole wheat pita breads

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

1 cup fresh spinach leaves

½ cup feta cheese, crumbled

½ cup tzatziki sauce (store-bought or homemade)

Instructions

Marinate the Chicken: In a bowl, combine the olive oil, oregano, garlic powder, onion powder, salt, and pepper. Add the chicken breasts, coat thoroughly, and let marinate for at least 30 minutes (or up to 2 hours for deeper flavor) in the refrigerator.

Cook the Chicken: Preheat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade, placing it on the grill. Cook each side for about 6-7 minutes or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Once cooked, let it rest for a few minutes before slicing into strips.

Prepare the Pita Wraps: While the chicken is resting, warm the pita breads on the grill for about 1-2 minutes on each side until soft and slightly charred.

Assemble the Wrap: Lay a warmed pita flat, then begin layering with fresh spinach, sliced chicken, cherry tomatoes, diced cucumber, red onion, and crumbled feta cheese. Drizzle generously with tzatziki sauce.

Wrap It Up: Fold the pita over the fillings, pinching the edges to secure everything inside.

Serve: Slice in half and serve immediately, with extra tzatziki on the side for dipping, if desired.
