Healthy Greek Chicken Pita Wraps

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

2 teaspoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

4 whole wheat pitas

1 cup baby spinach or mixed greens

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1/2 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup tzatziki sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, oregano, lemon juice, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6–7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, transfer the chicken to a cutting board and let it rest for about 5 minutes before slicing it into thin strips.

      Prepare the Pitas: While the chicken is resting, warm the pita breads slightly in a dry skillet or wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 5 minutes.

        Assemble the Wraps: In each warmed pita, layer a handful of baby spinach/mixed greens, followed by slices of grilled chicken, cherry tomatoes, cucumber, red onion, and crumbled feta cheese.

          Add the Sauce: Drizzle a generous spoonful of tzatziki sauce over the contents in each pita, and sprinkle with chopped parsley for a fresh finish.
