Healthy Greek Chicken Pita Wraps

2 boneless, skinless chicken breasts

4 whole wheat pitas

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red onion, thinly sliced

1 cup baby spinach or mixed greens

½ cup feta cheese, crumbled

¼ cup Kalamata olives, pitted and sliced

1/2 cup Greek yogurt

2 tbsp olive oil

2 tbsp lemon juice

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Marinate the Chicken: In a bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let them marinate in the refrigerator for at least 30 minutes.

    Cook the Chicken: Preheat your grill or stovetop grill pan over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F/75°C). Allow the chicken to rest for a few minutes, then slice into strips.

      Prepare the Veggies: While the chicken is cooking, dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
