Healthy Greek Chicken Pita Wraps

2 large chicken breasts, boneless and skinless

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper, to taste

4 whole wheat pita breads

1 cup cherry tomatoes, diced

1 cucumber, diced

1 cup baby spinach or mixed greens

½ red onion, thinly sliced

½ cup crumbled feta cheese

½ cup plain Greek yogurt

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill or parsley (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, dried oregano, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat evenly with the marinade. Let it sit for at least 30 minutes (or refrigerate for up to 2 hours for deeper flavor).

    Cook the Chicken: Preheat a grill or stovetop grill pan over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F). Remove from heat, let it rest for a few minutes, then slice into strips.

      Prepare the Sauce: In a small bowl, mix Greek yogurt, lemon juice, and fresh dill or parsley if using. Stir well and set aside.

        Assemble the Wraps: Warm the whole wheat pita breads lightly either in the oven or on a skillet. Start by layering a handful of baby spinach at the bottom of each pita, followed by sliced chicken, diced cherry tomatoes, cucumber, red onion, and crumbled feta.

          Add the Sauce: Drizzle or spoon the yogurt dressing generously over the fillings in each wrap.

            Serve: Fold in the sides of the pita and roll it up tightly. Serve immediately with extra yogurt dressing on the side, if desired.
