Healthy Greek Chicken Pita Wraps

2 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 whole grain pita breads

1 cup Greek yogurt (plain, unsweetened)

1 tablespoon lemon juice

1 cucumber, diced

1 cup cherry tomatoes, halved

1 cup baby spinach, chopped

¼ cup red onion, thinly sliced

¼ cup Kalamata olives, pitted and chopped

Feta cheese, for topping (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil, oregano, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat well. Let them marinate for at least 30 minutes (or up to 2 hours for deeper flavor) in the refrigerator.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, allow to rest for 5 minutes before slicing into thin strips.

      Prepare the Yogurt Sauce: In a small bowl, mix the Greek yogurt with lemon juice, salt, and pepper to taste. This will be your tangy sauce for the wraps.

        Assemble the Wraps: Warm the pita breads slightly in a dry skillet or microwave for about 10 seconds to make them pliable. Start with a layer of spinach at the bottom of each pita, followed by sliced chicken, diced cucumber, halved cherry tomatoes, red onion, and Kalamata olives.
