Ingredients

1 ½ cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1 medium apple, peeled and grated

1/2 cup diced dried fruit (such as cranberries or apricots)

1/4 cup chopped nuts (such as walnuts or almonds)

1 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup milk (dairy or plant-based)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, cinnamon, baking powder, and salt. Stir until well combined.

Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and milk until smooth. Add the grated apple to this mixture and stir until evenly distributed.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is just combined. Fold in the diced dried fruit and chopped nuts, mixing gently to ensure even distribution.

Transfer to Baking Dish: Spoon the mixture into the prepared baking dish, using a spatula to press it down firmly and evenly across the bottom.

Bake: Place the dish in the preheated oven and bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and Cut: Once baked, remove the dish from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out of the pan and place them on a cooling rack. Once completely cool, cut into squares or rectangles.

Store: Store the snack bars in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.
